Pavlova z granatem/ Pomegranate Pavlova

W lodówce zostało 6 białek, akurat na bezę :) Musiałam ją zrobić i poczuć smak lata w zimowe dni :) Rezultat - smakuje tak jak wygląda. Pychotka !!!

6 egg whites left in my refrigerator, just for a meringue :) I had to make it and feel the taste of summer in winter`s day :) The result - it tastes just like it looks. Yum !!!



 
 


Składniki:

Beza:
6 białek, temperatura pokojowa
szczypta soli
szczypta cream of tartar
1 1/2 szkl drobnego cukru
1 1/2 łyżeczki ekstraktu z wanilii
1 łyżeczka soku z pomarańczy
2 1/2 łyżeczki mąki ziemniaczanej

1. Nagrzać piekarnik do 115 stopni C/ 250 stopni F.
2. Blachę wyłożyć papierem do pieczenia i narysować koło o średnicy ok 23 cm/ 9 inches.
3. W dużej misce ubić białka z solą i tartar na sztywną pianę. Dodać cukier, po 1 łyżce i ubijać po każdym dodaniu. Dodać ekstrakt i sok z pomarańczy. Dodać mąkę i wymieszać.
4. Wyłożyć miksturę na przygotowaną blachę. Podnieść brzegi do góry.
5. Piec 1 godzinę, bez otwierania drzwi. Wyłączyć piekarnik i pozostawić w środku z zamkniętymi drzwiami na kolejną godzinę.

Sos:
1 1/2 szkl soku z granatu
1/4 szkl miodu
1 łyżka soku z pomarańczy

1. W garnku wymieszać składniki. Doprowadzić do wrzenia. Zmniejszyć ogień.
2. Gotować, bez przykrycia, przez kolejne 35 minut, mieszając od czasu do czasu.
3. Przelać sos do małego pojemnika i ostudzić.

Masa:
150 ml śmietany kremówki 36%
250 g sera mascarpone
1 łyżeczka ekstraktu waniliowego
1 łyżka drobnego cukru

1. W średniej misce ubić śmietanę na sztywno.
2.  Dodać pozostałe składniki, wymieszać.

Dodatkowo:
3/4 szkl nasion granatu
1/4 szkl pokrojonych orzechów pekan

1. Uważnie zdjąć bezę z papieru i przenieść na paterę.
2. Posmarować masą z mascarpone.
3. Posypać nasionami granatu. Polać sosem i posypać orzechami.

 Ingredients:

Meringue:
6 egg whites, room temperature
dash salt
dash cream of tartar
1 1/2 cups fine sugar
1 1/2 teaspoons vanilla extract
1 teaspoon orange juice
2 1/2 teaspoons potato flour

1. Preheat oven to 115 degrees C / 250 degrees F.
2. Line a baking sheet with parchment paper and draw a 23-cm/ 9-inch circle.
3. In a large bowl, beat the egg whites, salt and cream of tartar until soft peaks form. Add sugar, 1 tablespoon at a time, beating after each addition. Beat in vanilla extract and orange juice. Add flour and beat.
4. Put the mixture to the prepared baking sheet. Lift up the edges.
5. Bake for 1 hourdo not open the door. Turn off the oven and let meringue stand in oven with door closed for 1 hour.

Sauce:
1 1/2 cups pomegranate juice
1/4 cup honey
1 tablespoon orange juice

1. In a saucepan combine the ingredients. Bring to the boil. Reduce the heat.
2. Boil, uncovered, for 35 minutes, stirring occasionally.
3. Transfer the sauce to a small bowl and cool.


Cream:
150 ml whipping cream
250 g mascarpone cheese
1 teaspoon vanilla extract
1 tablespoon fine sugar

1. In a medium bowl, beat the whipping cream until stiff peaks form.
2. Add remaining ingredients and beat.


Additionally:
3/4 cup pomegranate seeds
1/4 cup chopped pecans

1 Carefully lift the meringue off paper and transfer to a serving plate.
2 Spread with mascarpone cream.
3 Sprinkle with pomegranate seeds. Drizzle with the pomegranate sauce and top with pecan nuts.
