Sernik z borówkami/ Blueberry cheesecake

Czas na kolejny serniczek z serkiem śmietankowym ;) Tym razem w połączeniu z borówkami, polany sosem z granatów :) Pyszny? Oczywiście :) Znalazłam go kiedyś na stronie Philadelphia, ale od tego czasu kilka razy już go udoskonaliłam, poprzez zamianę składników i ich ilości, połączenie z sosem z granatów i obniżenie jego kaloryczności :)

Time for another cream cheese cheesecake;) This time combined with blueberries, poured over with
pomegranate sauce :) Delicious? Of course :) I found the recipe on Philadelphia website, but since then I have improved it several times, by changing the ingredients and their amount, combining with pomegranate sauce and reducing its caloricity :)
 

 


Składniki:
24 ciasteczka oreo, pokruszone
1 1/2 łyżki rozpuszczonego masła
3/4 szkl drobnego cukru
32 oz/ 904 g sera śmietankowego Philadelphia
1 łyżeczka ekstraktu z wanilii
1 szkl 0% jogurtu greckiego
4 jajka
2 1/2 szkl borówek
sos z granatów - patrz poniżej

1. Nagrzać piekarnik do 170 stopni C/ 325 stopni F. Formę 9x13 -inch/ 33x23 cm wyłożyć papierem do pieczenia.
2. W dużej misce wymieszać ciastka Oreo z masłem. Wyłożyć na formę i przycisnąć.
3. W dużej misce ubić serek z cukrem i ekstraktem waniliowym, aż do połączenia składników. Dodać jogurt i dobrze wymieszać. Dodawać po 1 jajku, każdorazowo dobrze mieszając.
4. Wylać masę serową na pokruszone ciasteczka.
5. Do blendera wsypać 2 szklanki borówek i zblendować.
6. Nabierać masę z borówek łyżeczką i kłaść na cieście. Małym nożem przeciąć wyłożone borówki, aby uzyskać efekt marmurkowy.
7. Piec ok 45 minut. Pozostawić na kolejne 10 minut w lekko otwartym piekarniku.
8. Ostudzić i wstawić na noc do lodówki.
9. Podawać ze świeżymi borówkami, polane sosem z granatów.

Sos z granatów:
1 1/2 szkl soku z granatu
1/4 szkl miodu
1 łyżka soku z pomarańczy

1. W garnku wymieszać składniki. Doprowadzić do wrzenia. Zmniejszyć ogień.
2. Gotować, bez przykrycia, przez kolejne 35 minut, mieszając od czasu do czasu.
3. Przelać sos do małego pojemnika i ostudzić.

Ingredients:
24 oreo cookies, crushed
1 1/2 tablespoons melted butter
3/4 cup fine sugar
32 oz / 904 g Philadelphia cream cheese
1 teaspoon vanilla extract
1 ccup plain non-fat Greek yogurt  (0%)
4 eggs
2 1/2 cups fresh blueberries
pomegranate sauce - see below

1. Preheat oven to 170 degrees C / 325 degrees F. Line a 13x 9- inch/ 33x23 cm baking pan with a parchment paper.
2. In a large bowl, mix crushed cookies with the butter. Press  firmly onto buttom of the baking pan.
3. In a large bowl, beat cream cheese with the sugar and vanilla extract to until well combined. Add yogurt and mix well. Add eggs, 1 at a time, beating on low speed after each addition until blended.
4. Pour the cheese cream over crust
5. Blend blueberries.
6. Drop spoonfuls of blended blueberries over the cheese cream. Cut through batter with small knife for marble effect.
7. Bake for 45 minutes. Allow to stand for next 10 minutes in the oven, opened slightly.
8. Cool and refrigerate overnight.
9. Serve with fresh blueberries, topped with pomegranate sauce.

Pomegranate sauce:
1 1/2 cups pomegranate juice
1/4 cup honey
1 tablespoon orange juice

1. In a saucepan combine the ingredients. Bring to the boil. Reduce the heat.
2. Boil, uncovered, for 35 minutes, stirring occasionally.
3. Transfer the sauce to a small bowl and cool.
